The best part about this recipe is that it’s made in under 30 minutes with ingredients you likely already have in the fridge and pantry!

These taco bowls are one of my go-to dinner recipes every week. My entire family loves them, and they’re so simple to make. Not only are these taco bowls delicious— but they’re also loaded with protein, fiber, and healthy fats. It’s the perfect balanced meal that the whole family will devour.
These healthy taco bowls are also customizable, so you can swap in and out your favorite toppings and ingredients— like guacamole, beans, lettuce, shredded cheese, salsa— the options are endless! Plus, the taco sauce is packed with flavor and is the perfect addition to this recipe.
Ingredients
For the Meat & Potatoes
Potatoes- The base of this recipe is sweet, red, and Yukon gold potatoes. You can use any potatoes you have on hand, or even swap the potato base for rice.
Ground Beef- Ground beef is loaded in protein and flavor, making it the perfect meat option for these bowls. However, you can substitute with any protein you’d like, like chicken, ground turkey, or steak.
Oil- You’ll be tossing the potatoes in oil to bake, so I highly recommend using a healthy, high-quality oil like avocado or olive oil. You can also opt for butter, ghee, or tallow.
Coconut Aminos- Seasoning ground beef with coconut aminos is one of my favorite hacks to get the most juicy, delicious flavor. Though it’s optional, I highly recommend giving it a try!
Taco Seasoning- You can’t have taco meat without taco seasoning! You can use a premade taco seasoning or make your own with chili powder, cumin, and paprika.
Salt & Pepper- Salt and pepper enhance the flavor of these taco bowls. Use as much or as little as you’d like.
For the Special Taco Sauce
Mayo- Most mayo is made with canola or soybean oil— so I always recommend using an avocado-oil based mayonnaise, or making your own (learn how to make your own mayo here!)
Sour Cream- Sour cream adds the perfect pop of flavor and creaminess to the taco sauce. I recommend using full fat.
Lime Juice- If possible, opt for freshly squeezed lime juice as opposed to bottled.The fresh flavor makes such a difference!
Taco Seasoning- I like to use a premade taco seasoning blend, however you can make your own with chili powder, cumin, and paprika.
Sriracha- Make this special taco sauce as spicy or mild as you’d like. I love a spicy kick so I tend to go a little heavy on the sriracha!
Optional Toppings
- Chopped lettuce
- Sliced red onion
- Guacamole
- Sliced avocado
- Sliced tomatoes
- Salsa
- Shredded cheese
- Nacho cheese sauce
- Corn
- Black beans
- Fresh cilantro

How to Make Healthy Taco Bowls
1. Preheat the oven to 425°F (220°C).
2. Spread the chopped sweet potatoes, Yukon gold, and red potatoes onto a baking sheet. Drizzle with olive or avocado oil, season with salt and pepper, and toss to coat evenly.
3. Roast in the oven for 25-30 minutes, flipping halfway through, until the potatoes are golden brown and crispy.
4. While the potatoes are roasting, heat a skillet over medium heat. Add the ground beef, season with salt, pepper, taco seasonings, coconut aminos and cook until browned and cooked through. Set aside.
5. In a small bowl, combine the mayo, lime juice, taco seasoning, and sriracha. Adjust the amount of sriracha based on your spice preference.
6. Once the potatoes are done, divide them into serving bowls. Top each bowl with cooked ground beef and your choice of toppings.
7. Drizzle the taco sauce over each bowl just before serving. Enjoy!
How to Store Leftover Taco Bowls
These delicious and healthy taco bowls make for great leftovers. To ensure the best quality and freshness of each ingredient, I recommend storing the ingredients separately. The beef in its own container, the potatoes in their own container, the special sauce in its own container, and then the toppings may be stored together in a separate container. Keep refrigerated and use within 3-4 days!
When you’re ready to eat your leftovers, heat up the leftover beef and potatoes, and then add your toppings and special sauce on top.
These burger bowls are a great simple and delicious lunch or dinner to meal prep, so making them ahead of time and keeping the ingredients fresh in the fridge is a great option to save yourself time throughout the week!
