For the blondies:
- 1 & 1/4 cup all-purpose flour (I use einkorn flour)
- ½ tsp baking soda
- ¼ tsp salt
- ½ tsp ground cinnamon
- 1/2 cup butter or coconut oil melted
- 3/4 cup maple syrup or honey
- 1 large egg at room temperature
- 2 tsp vanilla extract
- 3 ripe bananas, mashed (about 1&1/4 cup)
For the cream cheese frosting:
- 3 tbsp butter, softened
- 1 cup full fat cream cheese at room temperature
- 4 tbsp maple syrup or coconut sugar
- 1 tsp vanilla extract
- ¼ teaspoon salt
How to Make Banana Blondies
1. Preheat your oven to 350°F and line a 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal.
2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
3. In a separate large bowl, whisk the melted butter and maple syrup until well combined.
4. Beat in the egg and vanilla extract until smooth.
5. Add the mashed bananas and mix until fully incorporated.
6. Gradually fold in the dry ingredients until just combined. The batter will be slightly thick and moist.
7. Pour the batter into the prepared pan and spread it evenly with a spatula.
8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

How to Make Cream Cheese Frosting
1. Using a stand mixer with a whisk attachment, or a hand mixer, beat the butter and cream cheese on medium-high speed in bowl until smooth, about 2 minutes.
2. Scrape down the sides of bowl, then add the maple syrup, vanilla extract, and salt. Mix on medium-high until light and fluffy, about 4 minutes, scraping the sides and bottom halfway through.
3. If necessary, chill in the fridge for about 10 minutes to achieve a spreadable consistency.
4. Once the blondies have cooled completely, spread the cream cheese frosting evenly over the top.
5. Cut into squares and enjoy!
