They’re crisp on the outside and fluffy on the inside, filled with warming spices and pumpkin flavor, and topped with a sweet homemade syrup– making them irresistibly yummy.

I’ve been making these pumpkin spice waffles for years, and everytime the weather starts to get a little chilly outside, the whole family comes begging for me to make them!

Tips for Success

  • Pre-heating your waffle iron is key to making your pumpkin waffles crispy on the outside and fluffy on the inside. Add waffle batter to the waffle iron only after it’s preheated, and allow your waffle iron to reheat for a minute or two between batches for the most perfect waffles!

  • Open the waffle iron once it has mostly stopped steaming. Most waffle irons will beep when the waffles are fully cooked, however, not all waffle irons have this automatic setting. If you don’t want to run into the problem of opening the waffle iron too early (and ripping the waffles apart), or too late (and having burnt waffles)– then this tip will help you out a ton! If there is no more heavy steam coming out of the iron, it means that the wet ingredients are cooked and it’s safe to open it up!

  • Use pumpkin puree, not pumpkin pie filling! Pumpkin pie filling has added sugar and spices, unlike pumpkin puree. You can use canned puree or make your own! I love to keep homemade pumpkin puree on hand all fall season long, for recipes just like this one! Check out my homemade pumpkin puree recipe here!

  • Don’t fret if you don’t have any pumpkin pie spice on hand! Just mix together 1 tsp cinnamon, ½ tsp ginger, ⅛ tsp nutmeg and ⅛ tsp cloves, and voila! You have your own DIY pumpkin spice blend.

Can I Freeze the Pumpkin Waffles?

One of the many things I love about this recipe is that the waffles freeze beautifully, so you can make a big batch ahead of time, pop them in the freezer, and have your favorite pumpkin waffles ready to go all season long!

Make sure to let the waffles cool entirely before freezing, and store them in an airtight container or ziploc bag. When you’re ready to eat them, just pop the waffles into a toaster oven, and enjoy!

What Is Apple Cider Syrup?

If you haven’t ever tasted apple cider syrup before, you are going to be obsessed!

Apple cider syrup is a simple combination of apple cider and maple syrup– simmered together to create the most perfect syrup for the fall season.

Topping your pumpkin waffles with this syrup adds incredible flavor, and adds even more fall spirit to the waffles!

Pumpkin Spice Waffles & Apple Cider Syrup Ingredients

For the waffles:

  • 1 cup pumpkin puree
  • ¾ cup maple syrup
  • ⅓ cup melted butter or neutral oil
  • 2 large eggs at room temperature
  • ¼ cup of regular milk or buttermilk
  • 2 tsp vanilla extract
  • 1 & ½ cup all-purpose flour
  • 1 tsp cinnamon
  • 1 & ½ tsp pumpkin pie spice blend (or DIY blend of cinnamon, ginger, nutmeg, and cloves)
  • ¾ tsp salt
  • ½ tsp baking powder
  • ½ tsp baking soda

For the syrup:

  • ½ cup maple syrup
  • ½ cup apple cider

How to Make Pumpkin Waffles with Apple Cider Syrup

For the waffles:

1. Preheat your cast iron waffle iron.

2. In a mixing bowl, whisk all the wet ingredients together.

3. In a separate bowl, mix together the dry ingredients.

4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

5. Grease the preheated cast iron waffle iron with butter or neutral oil spray.

6. Pour the waffle batter onto the center of the waffle iron.

7. Close the waffle iron and cook until the waffles are golden brown and cooked through.

8. Remove the waffles from the waffle iron and repeat with the remaining batter.

For the syrup:

1. In a small saucepan, combine the maple syrup and apple cider.

2. Bring the mixture to a simmer over medium heat.

3. Reduce the heat to low and let the syrup simmer for about 10 minutes, or until it has thickened.

4. Remove the syrup from the heat and let it cool slightly for a few minutes before serving with waffles.
