Once you try my homemade marshmallow fluff recipe, you’ll never buy the store-bought version again. This recipe is super easy to make, is made from simple, healthy ingredients, and tastes absolutely delicious— it’s a win-win!

Why You’ll Love This Recipe

  • This recipe is so easy to make. With just a few basic ingredients you likely already have in your pantry, and a few simple steps, you’ll have homemade marshmallow fluff made in under 20 minutes.
  • It’s actually good for you! Who would’ve thought the words healthy and marshmallow fluff could be in the same sentence?! Well, my marshmallow fluff recipe uses nourishing ingredients, like gelatin and honey, while most store-bought fluff brands contain unhealthy ingredients like corn syrup, preservatives, gums, and artificial flavors.
  • It’s versatile. Marshmallow fluff can be used in so many different ways. You can make pb & fluff sandwiches, use it as an ice cream topper, fill homemade cupcakes or layer it between cakes and other baked goods, or just eat it by the spoonful— the options are endless!

Ingredients

Gelatin- Gelatin is not only what makes the fluff thick and stretchy, but it’s also loaded with amino acids that are great for your bone and joint health, nourishes your skin and boosts brain function. I recommend using a high-quality, grass-fed gelatin for this recipe.

Honey- No corn syrup necessary to make my homemade marshmallow fluff recipe. I use local honey instead, and it tastes just as good as the store-bought stuff (even better in my opinion!) Honey is not only a delicious sweetener, but it’s also anti-inflammatory and loaded with antioxidants and minerals.

Maple Syrup- A dash of maple syrup is added to help balance the sweet and often floral flavor of the honey. Maple syrup is another go-to unrefined sweetener I use often— loaded with minerals and a rich, caramel-like flavor, it’s the perfect addition to this recipe.

Vanilla Extract- You can’t have marshmallow fluff without that staple vanilla flavor and aroma. You can use any old vanilla extract you might have in your pantry, or try making your own homemade version with my homemade vanilla extract recipe!

How to Make Marshmallow Fluff

1. Bloom the gelatin by mixing it with 1/4 cup cool water in either a large mixing bowl (if using a hand mixer) or the bowl of your stand mixer (if using a stand mixer).

2. Combine remaining water, honey, maple syrup, and vanilla in a saucepan. Bring to a roiling boil, stirring occasionally, until the mixture reaches a temperature of 238°-240°F. This took me about 10-12 minutes.

3. Using a hand mixer or stand mixer with the whisk attachment, slowly pour the hot mixture over the gelatin while beating on low. When thoroughly combined, increase the speed to high. Beat until the mixture becomes lukewarm, thick, white in color and stretchy. This took me about 8 minutes using a hand mixer.

4. Transfer to an airtight container or jar and store in the fridge for up to 3 weeks.

If the fluff becomes hardened in the fridge, simply place the container in a bowl of warm water for about 3-5 minutes to soften.
