Homemade Marshmallow Fluff

Once you try my homemade marshmallow fluff recipe, you’ll never buy the store-bought version again. This recipe is super easy to make, is made from simple, healthy ingredients, and tastes absolutely delicious— it's a win-win!

Equipment

  • hand mixer, or stand mixer
  • Candy thermometer

Ingredients  

  • 1 tbsp gelatin
  • 1/4 cup water cool
  • 1 cup honey
  • 6 tbsp water
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract

Instructions 

  1. Bloom the gelatin by mixing it with 1/4 cup cool water in either a large mixing bowl (if using a hand mixer) or the bowl of your stand mixer (if using a stand mixer).
  2. Combine remaining water, honey, maple syrup, and vanilla in a saucepan. Bring to a roiling boil, stirring occasionally, until the mixture reaches a temperature of 238°-240°F. This took me about 10-12 minutes.
  3. Using a hand mixer or stand mixer with the whisk attachment, slowly pour the hot mixture over the gelatin while beating on low. When thoroughly combined, increase the speed to high. Beat until the mixture becomes lukewarm, thick, white in color and stretchy. This took me about 8 minutes using a hand mixer.
  4. Transfer to an airtight container or jar and store in the fridge for up to 3 weeks.

Notes

*If the fluff becomes hardened in the fridge, simply place the container in a bowl of warm water for about 3-5 minutes to soften.
*Store in the fridge for up to three weeks, or in the freezer for up to 3 months.
*If freezing, make sure to leave about an inch of space in freezer-safe container or bag, for the fluff to expand while frozen. Thaw in the fridge overnight, and submerge in warm water to soften.
