Ingredients

  • 1 cup cottage cheese
  • 2 eggs
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 & ½ tsp Italian herb seasoning or seasoning of choice
  • Optional to make it more doughy: 4 tbsp flour + 1 tsp baking soda

How to Make Cottage Cheese Protein Flatbread

1. Preheat your oven to 350°F and line a 9 x 13-inch baking pan with parchment paper.

 2. In a high-speed blender or food processor, combine the cottage cheese, eggs, garlic powder, onion powder, and Italian herb seasoning. This is where you’d also add in the flour and baking soda, if using. Blend until the mixture is smooth and well combined. 

3 .Pour the cottage cheese mixture into the prepared baking pan and spread it out evenly. Bake in the preheated oven for 40 minutes, or until golden.

4.Once finished, let it cool slightly and enjoy! Use for wraps, sandwiches, pizza, and more.

Protein Flatbread Variations

  • Spice it up! Swap the Italian herb seasoning for any seasoning of choice. You can use curry powder, cumin, salt and pepper, or whichever spices you enjoy.

  • Make a sandwich or wrap. One of my favorite ways to eat this protein flatbread is by stuffing it with meat and veggies.

  • Make homemade pizza. Dollop sauce, cheese, and your favorite pizza toppings on the flatbread and pop it back into the oven to melt.

How to Store

Store your protein flatbread in the fridge for up to 5 days, or 3 months in an airtight container or freezer bag in the freezer. I love to make a big batch of protein flatbread and store them in the freezer. This way you can pull it out anytime for quick and easy lunch or dinner recipes!
