This healthy homemade mayo recipe is super easy to make and only requires a few simple ingredients.

In my house, mayo is a staple that we use all the time. Whether it’s on homemade sandwiches (check out my homemade sandwich bread recipe here), as a base of salad dressing, or mixed into tuna or chicken salad– mayo never goes to waste. 

This mayo recipe tastes even better and fresher than store-bought, and is made within minutes! All you need is an immersion blender, a jar, and your ingredients– and you’re ready to make your own DIY mayo!

Why Make Homemade Mayo?

While store-bought mayo is often made with unhealthy ingredients like canola or soybean oil, preservatives, and added flavoring– my homemade mayo recipe only uses natural and healthy ingredients.

Plus, you can whip this recipe together in just a few minutes with ingredients you likely already have at home!

Homemade Mayo Ingredients

  • Avocado Oil. Avocado oil is loaded with healthy fats, is anti-inflammatory, heart-healthy, and enhances the absorption of essential nutrients! Its flavor is neutral and not overpowering, making it the perfect oil for this healthy mayo recipe.
  • Egg. This recipe calls for one raw egg. I personally believe raw eggs are perfectly healthy to consume, and have been used in sweet and savory delicacies since ancient times. I always suggest sourcing pasture-raised or local eggs to ensure the highest quality!
  • Mustard. Dijon mustard adds the best flavor to this mayo– but feel free to use any mustard that you have on hand!
  • Apple Cider Vinegar or Lemon Juice. Acid helps to balance out the fat in the mayo and adds a fresh and zesty flavor. You can use apple cider vinegar or fresh lemon juice for this recipe.
  • Salt. Using high-quality sea salt will add extra flavor and healthy minerals to this recipe!

Do I Need to Use an Immersion Blender?

While using an immersion blender is the most seamless method of making homemade mayo– there are other alternatives you can use if you don’t have one available. 

You can use a food processor, hand mixer, or a whisk. The only difference is instead of adding the oil all at once, slowly pour in the oil while mixing to ensure the oil combines well with the other ingredients!

Does This Mayo Recipe Taste Like Store-Bought Mayo?

If you tasted this mayo recipe without knowing it was homemade– you wouldn’t know the difference! And in my opinion (and my whole family’s opinion too) it tastes even better and fresher than the store-bought stuff!

Can I Use Olive Oil Instead of Avocado Oil?

Avocado oil is the perfect oil for this mayo recipe because its flavor is neutral, and it’s loaded with healthy fats. Though olive oil has many health benefits, its flavor is stronger, and will affect the taste of the mayo– making it slightly bitter.

How to Make Healthy Homemade Mayo

  • 1 cup avocado oil or neutral oil
  • 1 large egg
  • 1 tsp mustard
  • 1 tbsp apple cider vinegar or lemon juice
  • Pinch of salt

1. Add egg, mustard, apple cider vinegar or lemon juice, and salt to a tall mason jar or container that fits the head of your immersion blender. Then add the oil last.

2. Place the immersion blender down to the base of the jar and blend for about 30 seconds without moving the blender.

3. As the mixture begins to thicken, slowly lift the blender to the top of the mixture to incorporate ingredients well, moving the blender up and down a few times without lifting it out of the mixture.

4. Continue blending until mayo reaches your desired consistency. 

5. Taste and adjust seasonings if desired. Enjoy!

Store homemade mayo in a jar or airtight container in the refrigerator for up to a week!
