Healthy Homemade Mayo

This healthy homemade mayo recipe is super easy to make and only requires a few simple ingredients. It is fresh, delicious, and so easy to make!

Equipment

  • Immersion blender, food processor, hand mixer, or a whisk., I prefer to use an immersion blender!

Ingredients  

  • 1 cup avocado oil or neutral oil
  • 1 large egg
  • 1 tsp mustard I prefer dijon
  • 1 tbsp apple cider vinegar or lemon juice
  • dash salt

Instructions 

  1. Add egg, mustard, apple cider vinegar or lemon juice, and salt to a tall mason jar or container that fits the head of your immersion blender. Then add the oil last.
  2. Place the immersion blender down to the base of the jar and blend for about 30 seconds without moving the blender.
  3. As the mixture begins to thicken, slowly lift the blender to the top of the mixture to incorporate ingredients well, moving the blender up and down a few times without lifting it out of the mixture.
  4. Continue blending until mayo reaches your desired consistency.
  5. Taste and adjust seasonings if desired. Enjoy!

Notes

Store homemade mayo in a jar or airtight container in the refrigerator for up to a week!
