Ingredients
- 1 cup avocado oil or neutral oil
- 1 large egg
- 1 tsp mustard I prefer dijon
- 1 tbsp apple cider vinegar or lemon juice
- dash salt
Equipment
- Immersion blender, food processor, hand mixer, or a whisk. I prefer to use an immersion blender!
Instructions
- Add egg, mustard, apple cider vinegar or lemon juice, and salt to a tall mason jar or container that fits the head of your immersion blender. Then add the oil last.
- Place the immersion blender down to the base of the jar and blend for about 30 seconds without moving the blender.
- As the mixture begins to thicken, slowly lift the blender to the top of the mixture to incorporate ingredients well, moving the blender up and down a few times without lifting it out of the mixture.
- Continue blending until mayo reaches your desired consistency.
- Taste and adjust seasonings if desired. Enjoy!
Notes
Store homemade mayo in a jar or airtight container in the refrigerator for up to a week!
