In my opinion, sourdough pancakes taste even better than regular pancakes. They always come out extra fluffy, are full of flavor, and since they’re made from sourdough– they’re easier to digest. It’s a win-win!

Sourdough Pancakes Tips

Don’t overmix the batter. Overmixing the batter develops the gluten and can make the pancakes turn out tough. Mix the wet and dry ingredients together until just combined.

The batter consistency is key. The pancake batter should be thick enough to hold its shape on the pan, yet thin enough to easily pour. If you notice your batter is too thick, add just a little bit more milk.

Cook your pancakes on medium-low heat. Don’t rush the process when it comes to flipping your pancakes. You want a golden brown crispy outside with a soft fluffy inside, and the best way to achieve this is by waiting until you see bubbles forming on the surface, then flipping the pancakes.

Sourdough Pancakes

This one-bowl recipe for fluffy and delicious sourdough pancakes only takes a few minutes to whip up, and comes out perfect every time!
Servings8 to 12 pancakes

Ingredients  

  • 2 1/2 cups active sourdough starter
  • 2 large eggs
  • 1/4 cup buttermilk or milk
  • 2 tbsp melted butter or coconut oil, avocado oil
  • 2 tbsp maple syrup or honey
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract

Instructions 

  1. Add all ingredients into a mixing bowl and mix until just combined.
  2. Heat a skillet or griddle over medium heat and lightly grease with butter or oil.
  3. Once the skillet is hot, reduce heat to medium-low and pour the pancake batter onto the skillet. Using about 1/4 to 1/3 cup of batter for each pancake.
  4. Cook the pancakes for about 2-3 minutes, or until bubbles start forming on the top surface.
  5. Carefully flip the pancakes using a spatula and cook for another 1-2 minutes, or until the pancakes are cooked through and golden brown on both sides.
  6.  Remove the pancakes from the skillet and stack them on a plate.
  7. Top your pancakes with butter, fresh berries, maple syrup or any other desired toppings. Enjoy!
